NW Elixirs Smoky Pork Meatballs


2 Pounds Ground Tails and Trotters Pork (www.tailsandtrotters.com)

2 Garlic Cloves (peeled,end removed)

2 Shallots (peeled, end removed)

1 tsp ground cumin

1 tsp salt

1 tsp ground black pepper

½ tsp ground cinnamon

3 tbs nw elixirs #3 hott smoke


In a small food processor combine; garlic, shallots, spices and NW Elixirs #3. Pulse until roughly chopped. 

Combine spice mash with ground pork and mix by hand until combined thoroughly.

Roll 1” round balls by hand and place on a clean flat surface.

Heat a large sauté pan with a small amount of blend oil and once hot add meatballs carefully not to splash fat on your hands. Allow balls to brown on all sides and cook through about 5 minutes. Right before serving toss in 2 tbs of nw elixirs #3 hott smoke and coat thoroughly. Add more if desired.
