Lamb Meatballs


3 oz. Garlic cloves (minced)
3 oz. Shallots (minced)
1 bu. Rosemary (minced)
1 bu. Thyme (minced)
2 tsp. Ground cinnamon
3 # SuDan Farms Ground lamb
2 fl. Oz. NW Elixirs Hott Sauce 1


Combine all ingredients in large bowl, mix well and portion into 1 ounce balls. Heat olive oil in sauté pan until oil is smoking hot. Remove pan from open flame add meatballs and return to heat. Reduce heat to medium. Once meatballs are cooked medium through add NW Elixirs Hott Sauce 1 and toss to coat. Serve on tooth picks or in a pasta, these guys are great appetizers.
