Black Bean Soup


4 cups Black Beans
¼ pound Bacon cut into large cubes
each Large carrots rough chop
each Celery stalks large chop
each Yellow onions large chop
tsp whole cumin seeds
each Thyme sprig
cups Chicken stock
cups Hot Water
Tbs Red Pepper Flakes

In large pot sauté bacon until fat starts to render.  Add cumin, stir for a minute, add rest of vegetables and sauté until onions are soft, add liquids and red pepper flakes.  Bring to boil reduce to simmer and cook until beans are soft all the way through.  Taste and season lightly.  Puree in a blender, and pour through strainer.  Taste for seasoning add salt if needed. Using an 8oz. Ladle pour into warm bowls and garnish with Spicy Sour Cream, and fresh chopped cilantro.

For spicy sour cream topping:

 ½ cup Sour Cream
Tbs NW Elixirs Hott Sauce #1
each Lime Juiced


Combine together in small glass bowl. Then spoon over the top of hot soup.
